Using Rice to Bulk Up a Meal for Frugal Friday – May 8th, 2015

You have another family over for a meal, and now you are not sure if your chosen dinner will go around everyone? Hoping they don’t ask for more after the plates have been licked clean? Someone has dropped by, right over dinner time. Its lunch time and the cupboards are looking bare as its the day before grocery shopping. During all of these meal times at our place, I will usually cook up a pot of rice.

Brown rice used to be our family favourite, but recently Jasmine or Basmati are very popular. Jasmine is very quick to cook, which is fantastic when its a last minute decision. I just throw in a cup of water for every cup of rice. Turn on high. Once its boiling, I turn the pot off and about 10 – 15 minutes later, rice is ready. It is that easy!

Rice is so versatile. Sometimes I throw some on our plate for lunch to add to our salad. My girls like to pour some Braggs Liquid Aminos or Tamari sauce on theirs. Otherwise for dinner, I will add some as a side on everyone’s plate. Rice is filling, nutritious, easy to mix with other dishes, and cheap. How do you serve rice as a side?
